About
Located in Beaconsfield Old Town in Buckinghamshire, the Greyhound serves modern British food in a comfortable and welcoming environment. Owners Daniel and Margriet have worked in some of the UK’s most highly-regarded restaurants including Michelin-starred Petrus, Restaurant Gordon Ramsay, and Trinity. Opened in 2019, the Greyhound is their first solo venture and has been awarded three AA Rosettes and won AA Restaurant of the Year (England) 2024/25.
Head chef: George Sweeney
George qualified from Bournemouth & Poole College after doing a three-year apprenticeship with the Royal Academy of Culinary Arts at The Langham London.
He joined the three-AA-rosette Sir Charles Napier restaurant in Oxfordshire in August 2020 where he was quickly promoted to junior sous chef.
After joining the Greyhound team in 2023, he was promoted from senior sous chef to head chef in 2024.
Menus
The Greyhound offers a seven-course tasting menu including vegan, vegetarian and pescatarian options, à la carte, and a set lunch
menu.
The latter changes every three months, with all menus adapting to the seasons, although some dishes feature longer based on guest feedback. George’s cooking style uses seasonal, British produce, sourced from the best suppliers from across the UK, to create modern British dishes with a hint of nostalgia.
Design
Located in a Grade II-listed, 17th-century coaching inn, the team have retained many of the property’s original features as part of its renovation. The Greyhound is made up of three areas for guests to enjoy:
- An intimate drinking lounge & outside drinking terrace
- The main restaurant for dining (upstairs and downstairs dining rooms)
- n outdoor covered dining terrace.
Wine
Winner of the AA’s Notable Wine List Award 2024/25, the Greyhound has an extensive wine list, developed by Margriet, who is certified with the Court of Master Sommeliers.
Wines are added to the list with diversity in mind, allowing guests to select from various price points and from all over the world. The list includes barrel aged Godello made by Alberto Orte in Spain, to an orange wine made by Lethbridge in Australia, and a chilled pinot noir from Artelium in England. It also includes classics such as a Sancerre from Millet Roger, Chablis premier cru from the Fèvre family in Burgundy and a 1986 Château Lynch-Bages Sème Grand Cru Classé. As Margriet is from Belgium, she works with world-leading breweries to offer beers such as Brugse Zot, a blonde ale on draught, and Geuze Boon, a sour beer she recommends as an apéritif.
